Mac & Cheese : Misses the Mark

This week for my Martha & Michelle challenge, I tackled one of the most comforting dishes of all time: mac and cheese. On the menu? Martha’s version, of course.
The recipe started with a simple roux that turned into a creamy cheese sauce. I used three different cheeses, which felt fancy and very “Martha.” The process itself was fairly simple to follow, and I’ll admit, it made the kitchen smell heavenly.
Here’s the thing… the final product just didn’t hit the spot for me. Don’t get me wrong, it was good. When it comes to mac and cheese, I’m a little picky. I like mine with a touch of nostalgia, and for me, that means a little Velveeta mixed in with the real stuff. It’s that creamy, slightly “fake” cheese flavor that takes me right back to childhood, and honestly? I think it makes mac and cheese unbeatable.
Mac and cheese is one of those dishes that everyone has an opinion on, and it’s surprisingly hard to get just right. So, Martha’s version? Tasty, but not my forever recipe.
